A classic treat that should be enjoyed 365 days a year, not just on holidays.
Peel hard boiled eggs. Cut in half lengthwise and add yolks to a bowl.
To the yolks, add mayo, dijon mustard, dill pickle relish, and salt and pepper to taste.
Mash and mix with a fork until smooth.
Fill egg white halves with mixture. Use a rubber scraper to get every last bit of filling out, it counts with a small batch like this.
Garnish with smoked pap.
