A simple cooked American-Italian red sauce.
Heat oil over medium in 3qt sauce pot. Peel garlic, and smash with side of knife. Sautee in oil for a few minutes while you locate your can of tomatoes and can opener. Add canned tomatoes, breaking them up as you add them to the pot. I use a potato ricer for this, but a food mill, or simply using your hands to squish the tomatoes as you add them will work too. If using a mill or ricer, and bits of skin and stem will be left behind, resulting in a sweeter/brighter finished sauce. Add sugar, salt (use 1/2 tsp if using regular table salt), and Italian seasoning. Simmer for 30 minutes, occasionally stirring/scraping down the sides of the pot. If a smoother final consistency is desired at the end, use an immersion blender to blend the sauce to your desired consistency (also helps blend the garlic in). Taste for final seasoning and adjust as necessary.
