This is one I (Scott) learned from our mom. We had these a lot growing up, often paired with macaroni and cheese and a green vegetable of some sort. I always make a ton of extra to snack on for lunch the next day. Chickfila sauce sold at grocery stores is great for dipping!
Beat eggs in a bowl and set aside.
Put flour into a bowl and set aside.
Crush cornflakes finely, and add ms dash. You need to use a lot more than you’d think necessary. It’s salt free, so go wild! I do all of this on a piece of foil.
Chop chicken into 1-1.5” pieces, season with salt and pepper.
Dredge chicken in flour, knock of excess.
Place chicken in egg mixture, turn to coat.
Bread chicken in cornflake mixture and place on a baking tray covered in foil or silicon liner.
Bake at 400* for 15-18 minutes, or until crispy and cooked through.
